Becky’s FAMOUS Alaska Salmon Chowder

If you have ever met my friend Becky then chances are she has fed you because she is the MOST hospitable person I’ve ever met. She is always feeding people and taking them food and just generally loving on everyone around her.

Becky is from Minnesota so she often makes some sort of hot dish which as a pacific northwesterner just call a casserole (that usually has tater tots) – and those are delicious. However, if Becky ever offers to make you some salmon chowder, I have to encourage you to accept. Run, don’t walk. Get to Becky’s house and pick up your chowder before someone else hears about it and beats you to it.

Becky made her salmon chowder for a group of speakers that I brought up for an event several years ago and it was one of the highlights of their trip. I STILL get messages telling me they are making her chowder and how much they love it.

Becky willingly shared her recipe with me and now I am sharing it with all of you. I promise, you’re going to love it. So just put it on your menu rotation right now and plan to enjoy it at regular intervals because your family will be asking for it often.

Oh, and there’s one step in this that you don’t want to miss. Be sure to grate the carrots. It gives the soup a bit of a different texture – those grated carrots make it spectacular.

You can top it with cheese or green onions or you can just scoop it right out of the bowl without any toppings.

I just use two pints of canned salmon. Here’s a hint for a variation – use smoked canned salmon for a bit of a different flavor. I think it’s best with one jar of regular and one jar of smoked salmon. SOOO tasty!

OH! And you can sub the cream for half and half but – well, just don’t. Generous amounts of cream is part of what makes this recipe incredible. Besides, cream is GOOD for you! So enjoy!

Becky's FAMOUS Alaska Salmon Chowder

This recipe comes from my dear friend Becky and it's now been shared across the US and beyond! Every time I make it, I'm asked for the recipe! It's so so yummy! You just gotta try it - with Alaska salmon, of course!

Ingredients
  

  • 1/2 C. Bell Pepper Red is prettiest in this soup
  • 1/2 C. Onion, Diced
  • 1/2 C. Celery, Diced
  • 3 Cloves Garlic I use more like 6 or 7, to be honest
  • 3 Tbsp Butter
  • 4 C. Chicken Broth
  • 2 C. Cubed Potatoes
  • 1 1/2 - 2 C. Shredded Carrots I know shredding the carrots is a bit of an extra step but they make the texture perfect!
  • 1 Tbsp Salt
  • 1 1/2 tsp Dill
  • 3 C. Heavy Whipping Cream
  • 2 Pints Canned Salmon, drained Can sub with approximately 4 cups cooked salmon if you don't have canned salmon.

Instructions
 

  • Saute bell pepper, onion, and celery in butter until tender. You can do this right in your soup pot - no need to make extra dishes!
  • Add the rest of the ingredients except the cream and salmon. Cook until the potatoes are tender.
  • Add cream and salmon and heat through.
  • Dish up and enjoy. You can sprinkle with a little bit of cheese and/or some green onions. This is so yummy with fresh, hot biscuits.
