Becky's FAMOUS Alaska Salmon Chowder
This recipe comes from my dear friend Becky and it's now been shared across the US and beyond! Every time I make it, I'm asked for the recipe! It's so so yummy! You just gotta try it - with Alaska salmon, of course!
- 1/2 C. Bell Pepper Red is prettiest in this soup
- 1/2 C. Onion, Diced
- 1/2 C. Celery, Diced
- 3 Cloves Garlic I use more like 6 or 7, to be honest
- 3 Tbsp Butter
- 4 C. Chicken Broth
- 2 C. Cubed Potatoes
- 1 1/2 - 2 C. Shredded Carrots I know shredding the carrots is a bit of an extra step but they make the texture perfect!
- 1 Tbsp Salt
- 1 1/2 tsp Dill
- 3 C. Heavy Whipping Cream
- 2 Pints Canned Salmon, drained Can sub with approximately 4 cups cooked salmon if you don't have canned salmon.
Saute bell pepper, onion, and celery in butter until tender. You can do this right in your soup pot - no need to make extra dishes!
Add the rest of the ingredients except the cream and salmon. Cook until the potatoes are tender.
Add cream and salmon and heat through.
Dish up and enjoy. You can sprinkle with a little bit of cheese and/or some green onions. This is so yummy with fresh, hot biscuits.
